Raaste ka mast Chaat.......

These guys have been here for years, so much so that they have a small space in the compound of the building to keep their stuff.

They normally start laying out their Thela/Stall by 3-4 pm & are ready for "BIJNESS". But if you are not a regular, then there is a certain order to follow, if reaching there before 5.30pm

Order a Bhel made to your order, theekha, meetha, nimbu jaada etc. Take your time eating it, but warn him that you are going to have pani puri; so that he would make the masala ready & start chilling the pani.

Then try out the sev puri/dahi puri.

Finally the pani puri, As a connoisseur, you first need to taste the water, ask him to pour it in the small katori, swirl it around your mounth, testing it for the tanginess (Khatta), masala (for the burrrp) & the chill.....If perfect, then select your masala - whether you want it with ragda (del style); aloo chana masala (Bong style); moong(diet style), with/without meetha chutney & you are ready for Action........It helps if there are 3-4 people eating at the same time....so you can savor the pani puri. Or you have to be like Dhoni or Srikanth to bat extremely quick.

Soon the plate of 6 puri's are over. Ideally if early you should have 2 plates, then polish off with hot sev kurmura masala daal ke.

If it is after 5.30 to 8.30 on all days, you just have to jostle in line with the kids, mahila & purush hoping for the best.
